The culinary philosophy of Deane House and River Café is deeply rooted in sustainability. Decision-making around all aspects of operations is governed by a commitment to championing local food economies. We connect directly with growers and producers at their farms, gardens and ranches, and carefully choose those purveyors who are responsible stewards of the land. 

We have an on-site edible garden at both locations, and are longstanding supporters of urban gardening initiatives. We forage, pickle, cure, and preserve quality seasonal ingredients borrowing from traditional holistic culinary techniques to create a style of cuisine that is a thoroughly modern celebration of regional ingredients.

We believe we can make a difference. As a result, we make very deliberate choices about how we operate, and we are constantly reviewing our practices to find ways to further reduce our "foodprint." Eliminating bottled water, reducing energy consumption and water use, daylight dining, reusing materials, recycling and composting are just some of the ways we lessen our impact on the environment. Careful sorting routines at the restaurants means that nearly everything we use is diverted from landfill waste.
